Sankranti is a festival dedicated to expressing gratitude to the Sun for its light, energy, and warmth. It marks the end of winter as the days gradually become longer. Traditional dishes made with ingredients like moong dal, rice, jaggery, and sesame seeds are prepared, as they are known to be nourishing for the body.
Ingredients
Sesame seeds/Til 400 g
Peanuts 100g
Roasted chana dal 50g
Jaggery 300g
Ghee 1tbsp
Warm water quarter cup
Or
Puffed rice 100g
Sesame seeds 50g
Jaggery 250g
Peanuts 50g
(Same procedure as the below using puffed rice)

Roast the sesame seeds:

Heat a pan on low flame and dry roast the sesame seeds until they turn golden and aromatic. Remove and let them cool.

Roast the peanuts:

In the same pan, roast the peanuts until they are crunchy on medium flame. Let them cool, then remove the skin by gently rubbing them.

Grind the peanuts and chana dal:

Coarsely grind the roasted peanuts and roasted chana dal separately. Keep them aside.

Melt the jaggery:

In a separate pan, add jaggery and 1/4 cup warm water. Heat on low flame until the jaggery completely melts and forms a syrup.

To test the syrup, drop a little in cold water; it should form a soft ball.

Combine the ingredients:

Add 1 tablespoon of ghee to the melted jaggery and mix.

Quickly add the roasted sesame seeds, ground peanuts, and roasted chana dal. Mix thoroughly until everything is coated with the jaggery syrup.

Shape the ladoos:

Allow the mixture to cool slightly, so it's comfortable to handle but still warm.

Grease your palms with ghee and take small portions of the mixture. Roll them into round ladoos.

Let the ladoos cool completely before storing them in an airtight container.
