Rajgira (Amaranth) halwa

Celebrate Holi with the delicious and healthy Rajgira Halwa! This gluten-free dessert, made with amaranth, ghee, jaggery, and nuts, is packed with nutrition and festive flavors. Easy to make and perfect for any celebration!




 

Ingredients (Use the same measuring cup for all):

  • 1 cup rajgira (amaranth)

  • ½ cup ghee (clarified butter)

  • 2 cups water

  • 1 cup jaggery (grated or broken into small pieces)

  • 1 tbsp ghee (extra)

  • 2 tbsp chopped almonds and cashews each

  • ½ tsp cardamom (elaichi) powder

Method:

  • Roast the Rajgira:
    ​    Grind rajgira to extra coarse. Heat ½ cup ghee in a thick-bottomed pan on medium flame. Add 1 cup rajgira and roast it, stirring continuously, until it turns light brown and gives off a nutty aroma. Be patient—this step ensures a perfect texture.

  1. Add Water:

    • Carefully pour 2 cups of water into the roasted rajgira while stirring to avoid lumps.

    • Cook on a medium flame until the water is fully absorbed and the rajgira softens.

  2. Add Jaggery:

    • Once the water is absorbed and the rajgira is cooked, add 1 cup jaggery.

    • Stir well and let it melt completely, blending with the halwa. Cook for 3–4 minutes until it thickens and turns glossy.

  3. Enhance the Flavor:

    • Add 1 tbsp ghee, chopped almonds, cashews, and ½ tsp cardamom powder.

    • Mix well and cook for another 2–3 minutes, allowing the flavors to blend beautifully.

  4. Garnish and Serve:

    • Turn off the flame and garnish the halwa with more chopped nuts.

    • Serve warm and enjoy this healthy, gluten-free, and delicious festive treat!
