

Egg-infused protein pasta
Delight in the richness of egg pasta a creamy, protein and flavourful dish perfect for cosy meals or indulgence. Simple, wholesome and absolutely irresistible!

Onion 1 medium size chopped
Carrots same quantity as onion
Garlic 5-7 cloves chopped
Mixed herbs or oregano
Salt
Black pepper (optional)
Grated mozzarella cheese 1 cup
Pasta 1 medium cup
4 eggs medium size
Oil
Red chilly flakes
Instructions:

Saute the Vegetables:

Heat a non-stick pan over medium flame and add 2 tablespoons of oil.

Once hot, add chopped garlic and saute until fragrant.

Add onions and carrots. Cook well until softened.

Boil the Pasta:

In a separate pot, boil 2 cups of water with ½ teaspoon of salt.

Add pasta and cook well. Drain the water and set aside.

Combine Pasta and Vegetables:

Add the boiled pasta to the pan with the sauted onion and carrot mixture.

Stir and saute for a couple of minutes to combine the flavours.

Prepare the Egg Mixture:

In a mixing bowl, crack the eggs and season with salt and pepper.

Add grated cheese and whisk thoroughly.

Cook the Egg Pasta:

Lower the flame and pour the egg mixture over the pasta.

Cover the pan and cook on low heat until the egg is fully set and the cheese has melted.

Rest and Serve:

Turn off the flame and let the pasta sit covered for 5–8 minutes.

Carefully demould the pasta, slice it into portions, and serve hot.
